the card Low Stance reads: "Target your unbowed Samurai Personality: Target an enemy Personality. After this Combat Segment ends, reduce his Force to 0." So I can get it through my thick skull, when is that, and how long does his force remain 0?

The Combat Segment ends after both players pass consecutively. At that point, you move on to Battle Resolution, so the personality targeted by Low Stance would be reduced to 0 force before you calculate who has won or lost the battle.
As with all ongoing effects, this force penalty would last until the end of the turn, although the poor guy will be lucky to survive the battle!
