I am pretty sure that I know how this special rule works, but I want to double check just in case I am somehow misinterpreting the phrasing... The rulebook says that the number in the brackets (for this example lets say its MR[2]) is the amount of extra dice you can use for EACH spell cast on the resistant unit.
Am I correct by interpreting this to mean that these MR dispel dice do not get used up when you use them on a spell, therefore allowing you to always have two dispel dice for every spell cast on that unit?

That is correct. You get two dice EVERY time a spell is cast at a unit with MR (2). I can be very good. Keep in mind you have to roll the dice. Also, you only use the highest MR in the unit.

Excellent. I have been debating whether or not I want to spend some money on Stone Trolls, as I have a little bit of extra money lying around. I definitely think that a unit of four or so could be a good addition to my army...
